Champagne
What’s a celebration without Champagne? Champagne has become the drink of celebration over the years since Dom Perignon accidentally created a wine with sparkling golden bubbles. Many customers often confuse Champagnes & Sparkling Wines, but there is a remarkable difference between both which exceeds taste and style. The name ‘Champagne’, under regulations and laws, is exclusive to sparkling wines produced in the French region of Champagne. It is made using three grape varieties (Pinot Noir, Pinot Meunier, and Chardonnay) that are combined to produce a still wine. The wine is bottled with sugar and yeast and allowed to mature in the cellars for a minimum of 12 months. During maturation, alcohol is produced and carbon dioxide is trapped in the bottle which results in the sparkling bubbles we see when we pour a glass of Moet & Chandon or Veuve Clicquot. It is further processed to give it unique characteristics of complexity, aromatic flavours, distinctive taste, and class. There are several general factors that influence the pricing of a Champagne bottle, they include the limited land of the region, the prestige that Champagne has developed worldwide, and the high cost of the production process, among several other factors. Some prestigious…

Whiskey
Whisky which originates from Ireland and Scotland; (Bourbon and Rye are the US versions of Whisky). Whisky is a distilled spirit of around 40% alcohol by volume, which is made from a variety of fermented grains such as barley, corn, rye and wheat; these grains are sometimes malted but they must always be aged in wooden casks (normally made from white oak). Whisky is traditionally distilled in copper stills in order to remove the sulphur-based compounds, which can render it bitter to the taste. As Whiskies do not mature in the bottle, the age of a whisky is solely measured by the length of time between its distillation and its bottling. In its youth, Whiskey was not permitted to age and was therefore a much harsher spirit, barely resembling the smooth drink, which we all know, and love today. Whiskey is normally drank neat in a Whiskey tumbler but it can be drank with cold water or ice. According to written records, the earliest production of Whiskey is recorded in Ireland in 1405 cited in the Annals of Clonmacnoise; the first record of Whiskey in Scotland is cited almost 90 years later in 1494. The Old Bushmills Distillery is the…
Blended Scotch Whisky
Blended scotches are, as the name suggests, a combination of two or more scotch whiskies. Blended Malt Whiskey is a fusion of single malt whiskeys from different distilleries; if a bottle is labelled ‘malt’ or ‘pure malt’, it is most likely to be a blended malt; creating an aroma and flavour of the brand as opposed to the distillery. Blended Whiskey is a medley of different types of Whiskey from many different distilleries, thereby enabling the blender to produce a strain, which is consistent with their brand as opposed to that of any particular distillery. Most Scotch, Irish and Canadian Whiskey is sold as part of a blend, even when the spirits are the product of one distillery. Owing to a recent increase in the popularity of sweet-tasting alcoholic beverages, many American Whiskey purveyors have started to produce Liqueur Whiskeys. Although such products have recently become popular, Liqueur whiskeys have been routinely made by Scottish distillers for more than 100 years. As with their US counterparts, traditional Scotch Liqueur whiskies often use honey to sweeten them; however, they enhance their depth and flavour by using other ingredients such as citrus, coffee, almonds, cinnamon, vanilla, herbs and spices. Next time you…

An additional labelling in the US Whiskey market place is that of Tennessee Whiskey; the only defining difference between a Bourbon and a Tennessee Whiskey is that a Tennessee Whiskey is charcoal filtered; whereas, a Bourbon is not. By US Whiskey Law American whiskey must be distilled to no more than 80% alcohol, by volume and barrelled at no more than 125 proof; only water can be added to the final product. American Whiskey must be aged in new oak charred-casks with the exception of Corn whiskey, which is not generally aged. If these whiskeys are aged…
Irish Whiskey
Irish Whiskeys are normally triple distilled; they are traditionally distilled in pot stills although the column still is now used to produce grain whiskey for blends. Irish Whiskey Regulations state that Irish whiskey must be produced in Ireland and aged in wooden casks for a period of at least 3 years (although in practice it is normally aged for 9—12 years). Any age statement on a bottle must refer to the youngest Whiskey used to create that particular blend. Irish Whiskey tends to be broken down into two main varieties: Malt Whiskey, which is made from malted barley, and Grain Whiskey, which is made from grains. Single Malt Whiskey is a single distilled whiskey, made from a single grain species; unless the bottle specifically states ‘single cask’, you can assume that it contains a blend comprised of many different casks, from many different years. This enables the distiller to purvey a taste and character, which is unique to their own distillery. Any additional age statements or maturation techniques are usually indicated, on the label. Cask Strength Whiskey (also be referred to as barrel strength whiskeys), are bottled from the cask without being diluted; they are exceptionally rare and normally only…

After distillation, un-aged brandy is placed in oak barrels to mature; after a period of aging, which depends on the variety, classification, and legal requirements, mature brandy is mixed with distilled water to reduce the alcohol concentration before bottling. Brandy is considered a ‘digestif’ or after-dinner drink, which varies between 35% and 60% alcohol by volume. Its caramel-coloured spirit is generally achieved in higher quality brandies by aging in wooden casks, by adding caramel colouring (in lower quality brandies), or by a combination of both methods.
